Toasted Sandwich with Goats Cheese, Pumpkin and Broccolini

Ingredients

  • 1 x Multiseed Healthy Loaf Cottage or Small Loaf, sliced
  • Goats Cheese (we love Meredith Goats Cheese)
  • Broccolini
  • Sliced Pumpkin for roasting

Method

  1. Pre heat oven to 180
  2. Fill a small pot with water and bring to the boil
  3. With a sharp knife cut four generous slices of bread form your Healthy Loaf  (please ensure it’s completely cooled before slicing) and set aside
  4. Place thinly sliced Pumpkin on baking tray and drizzle with olive oil, place in oven until cooked (10-15 minutes)
  5. Place Broccolini in boiling water and blanch
  6. Turn Grill or Sandwich Press on
  7. Place sliced bread on chopping board
  8. Spread goats cheese on one slice of bread and place the roasted pumpkin on the other slice of bread, place branches broccolini on top of the roast pumpkin,
  9. Place the goats cheese bread on top with the other side
  10. Place Sandwich on the grill or Sandwich press and lightly toast your sandwich
