Rainbow Veggie Burger

Ingredients

  • 4 Healthy Loaf Linmeal Rolls
  • 1 cup quinoa
  • 2 potatoes, peeled and boiled
  • 1 large beetroot, peeled and grated
  • Handful of fresh spinach, roughly chopped
  • Ginger paste, 1tspn
  • Garlic paste, ½ tspn
  • ¼ cup of goats cheese
  • 1 carrot, grated
  • 1 avocado
  • Your favourite chutney (we love Otway Preserve’s Autumn Fruit Chutney click here for details)
  • 1 tbsp olive oil

Method

Serves: 4

  1. Preheat the oven to 180o
  2. Line a baking tray
  3. In a large bowl, crush potatoes with a fork, add grated beetroot and carrot, ginger paste, garlic paste and quinoa
  4. Stir with a wooden spoon just enough to combine evenly
  5. Crumble the goats cheese and gently combine into the mixture
  6. Wearing rubber gloves, form into 4 large patties
  7. In a fry pan, heat a table spoon of olive oil, add the patties briefly to crisp the outsides, approx. 2mins each side or until lightly golden
  8. Place patties on the oven tray and bake in the oven for 10 minutes to heat through
  9. Spoon avocado into a bowl and mash with a fork
  10. Split Linmeal Rolls in half with a sharp knife and spread chutney, then the avocado generously onto the top halves
  11. Add the cooked beetroot patties to the rolls and put their tops on

We served ours with homemade sweet potato fries (matchstick diced sweet potato, shallow fried in olive oil) but a side salad would also be perfect in summer!
