Place on a lined baking tray and set aside
In a hot frypan lightly sauté Mushrooms, Onion, Capsicum and Tomato until cooked. At the last moment add spinach and wilt slightly.
Evenly spread half your shredded cheese into your sliced Vienna loaf
Evenly spread your vegetable mixture through your sliced Vienna loaf
Evenly spread the last of your shredded cheese through and over your sliced Vienna loaf
Place in oven until bread is lightly toasted and cheese is melted
